Maraschino Cherry Cake

Maraschino Cherry Cake
Maraschino Cherry Cake --it is no lightweight cake

2 C sugar
3/4 C butter
1 C milk
3 C flour
1/4 tsp salt
2 1/2 tsp baking powder
5 oz chopped cherries with juice
1 cup chopped fine pecans
4 beaten egg whites

Cream sugar & butter. Sift together flour, salt, BP, add to creamed mix. Add milk, nuts, & fold in beaten egg whites.

350 degrees, about 40 minutes, 2 9" cake pans

Cherry frosting:

1 package cream cheese softened
1/3 C butter room temp butter
4 C powdered sugar
1/4 tsp salt
2-3 TB milk
1 tsp vanilla
2 TB drained chopped cherries
2 drops red food color (I didn't use any)

I bought a 16 oz jar of cherries & used extra in the cake batter/frosting.
