Apple Dumplings
Pastry:
2 1/2 c. flour
1/4 tsp. Salt
6 Tbp. ea. butter & lard or oleo
Filling:
6 Apples (Granny Smith/Delicious)
butter
1/2 c.cinnamon sugar
1/2 tsp. Cinnamon
1/2 cup ea. brown & white sugars
2 c. water
Prepare pastry-Sift flour & salt into bowl & cut in shortenings. Mix until it resembles pea-sized crumbles. Add water a tsp at a time until the dough comes together into a moist ball. Refrigerate for 20 min. Prepare apples-Wash & core apples. Prepare sauce- In a med-sized saucepan, combine 2 c. water & 1/2 c.ea. Brown & white sugars & 1/2 tsp.cinnamon. Add 1/4 stick of butter & bring this to a full boil. Set aside. Divide dough into 6 pieces & roll into circles. Make 3-4 inches larger that the apples. Put an apple in center of each & fill core with cinnamon sugar. Dot top of core with a 1/2 tsp.butter. Fold dough up around apple and seal on top. Put all into a round cake pan and pour sauce over top of each Dumpling. Put in middle of preheated 375 deg. oven & bake until golden brown. Cool slightly. Serve with juices spooned on top. Very Hot inside.
