Asparagus Pie
2 Unbaked 10" pie shells
20 fresh asparagus spears or 1 ( 10 oz ) pkg. frozen spears, cooked
2 c. cooked chicken
8 slices bacon
10 eggs
1c. shredded Swiss cheese
1 Tbsp. flour
1/2 tsp. salt
2 c. light cream ( half - n - half )
2 Tbsp. grated parmesan
paprika for garnish
Arrange cooked asparagus in bottom of pie shell, spoke-fashion. Top with chicken. Cook, drain and crumble bacon. Scatter it and Swiss cheese over asparagus and chicken. Beat together eggs, flour, salt and cream; pour over asparagus. Sprinkle with parmesan and paprika. Bake @ 375 degrees 45-50 minutes or until pie filling is set. Let stand 10 minutes before serving.
Makes 2 pies- freezes well
