In Sweden lutfisk is a nowadays I think only eaten at Christmas as part of the traditional smörgåsbord (it's dried white fish which is resaturated and then put in lye).

...and lutfisk is a lot easier to eat than surströmming (sour herring) which is actually fermented herring:)
