Years ago,when I worked for a vet, every holiday, we'd be overrun with dogs with pancreatitis- thanks to handouts of goodies(which are not so good).

I think the concern is with the tryptophan. I know cooked turkey skin gets super hard too sometimes especially deep fried.

I was reading up a little on this and there is also a risk of pancreatitis - especially w/turkey based in butter/spices ect..I wouldn't have thought of this, thx for mentioning!
