This recipe comes from my Trader Joe's Party Cookbook. It's so refreshing and tasty, and I think it's just perfect anytime.
btw, I ended up doubling the batch I made today. Enjoy!! :D
2 cups cubed watermelon
1/3 cup crumbled feta cheese
1/2 cup pitted black olives
1 tablespoon red wine vinegar
3 tablespoons olive oil
1/4 cup chopped fresh mint
1/4 cup chopped red onions (optional)
Toss all ingreds together to combine. Chill or eat at room temp.
