lol!! yes, there are two kinds of persimmon: Hachiya and Fuyu's. The one's my neighbor grows are Hachiya and those must be fully ripe before eating, but the Fuyu's don't have to be and still taste good even when not ripe. Those are the one's i'm more used to eating. The hachiya's are almost a custard-like consistency once ripened. So, we both learned something! I'm just not gonna tell my neighbor what happened tho if he asks. Hoping he'll give me some more so i can properly eat them next time. hehe.
