Bullyproof

Ok folks, most of you have read my intro about Kiah. Over the past few weeks she has really to started to shine. I can have her on the porch and she isn't barking or trying to charge dogs in the street nearly as much. She has learned to sit, down, come, lets go and leave it and I only have to treat her around 25-50% of the time. She was sticking to the rules/boundaries I laid out for her, listening to me, showing me how good she really can be.
Then something happened last night...
Usually I give her a treat and she goes right into her crate, but last night she got stubborn. I just waited it out and she eventually went in. I waited till she was calm and I closed the door. She whined for about 3-5 minutes and then she went to sleep. This morning she was perfect, we went on out normal walk, then obedience, breakfast and some playtime. I left around 11:30am to head to the store. I was back around 2:30. I opened her crate, she was fine, I called her to me, gave her a head scratch and told her to sit as I went to put on her harness. I took her outside so she could do her business. It was really hot out, so we were only out for a few. She came in, drank some water and laid down in her bed.
I had some work to do, I'm an IT Consultant and I work remotely most of the time. I do this every day/night and I've never had any issues with her while I'm at my desk. So today I'm clicking away, not making any noise and BOOM she jumps up out of a sound sleep and charges my leg, jowels open and ready to clamp. I saw her eyes roll back into her head and I only had a split second to react. I spun my chair around, jumped up and gave her a firm no and OUT just as she was about to clamp down. Luckily I didn't get bit, this was very very close people. I walked towards her, I won't back down and she retreated right into her cage. I waited till she laid down and shut the door. I kept my cool and let her cool off. I waited it out for over an hour, I saw she was calm and I let her out. I called her to me, she walked over, put her head down and sub-missed. I gave her a treat, she laid back down in her bed and I went back to work. About 15 minutes later, BOOM same thing again. Except this time I saw her tongue was out, not the normally bully tongue hanging out, it was almost over her right eye which was twitching a bit. She was snarling/bearing her teeth hard, her eyes were rolling and I had to be extra on guard mode. I didn't let her get across the living room this time. She backed off, laid down on the carpet and continued to bare her teeth while trying to lick the right side of her face. Since the second time, she has done it 2 more times. There was no provocation, she was just laying there and snapped in an instant. I've had to put her in her crate to protect my safety and hers. I took her out after I ate dinner and she was on her best behavior for our walk. When we got back, she ate 75% of her food and laid down. I was talking to my mom on the phone about this and BOOM she did it again.
I've been reading about this all afternoon and it seems to point to a neurological disorder. I had her at the vet on Thursday for a full physical exam and I was told she was fine. I even took her to my old vet who specializes in Bullies. I've called the behaviorist and once I told her what happened, she said she would call me back. Of course she hasn't called me back yet and is ignoring my calls/texts. I'm very close to taking her to a bully rehab. I've dealt with all types of aggression but this may be out of my scope of support.
I need some ideas/help my bully friends. What say you?! I can't figure out what triggered this.... Please help!
