Braised Ribs
Dry rub for each rack:

8 tablespoons light brown sugar
1 tablespoon sea salt
1/2 teaspoon chili powder
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon jalapeno powder
1/2 teaspoon old bay seasoning
1/2 teaspoon rubbed thyme
1/2 teaspoon onion powder

combine and slather onto both sides of the rack of ribs. Wrap in foil leaving one end open to pour in the liquid.

Liquid

1 cup white wine
2 tablespoons white wine vinegar
1 tablespoon honey
2 tablespoons worchester sauce
2 cloves chopped garlic

Pour liquid into foil boat and seal.

Let sit for several hours.
Heat oven to 250, then cook 3 1/2 hours.
Then drain liquid into a sauce pan.
Reduce and add more white wine and light brown sugar. when sauce is thickened, cut ribs into two rib sections, place in bowl, add sauce and mix. Return to oven at 350-400 long enough to sear sauce onto the ribs.
Let rest for five minutes and dig in.
