Crockpot Broccoli Chicken and Rice Casserole
6 eggs beaten
24 oz carton small curd cottage cheese
2 cups shredded cheddar cheese
1/3 cup flour
¼ cup melted butter
1 8oz package sliced mushrooms
½ tsp onion powder
Salt and pepper to taste
Combine first 9 ingredients and pour into a greased crockpot.
Cover and cook on High 1 ½ hour
Add
1 cup cooked rice
2 stalks chopped broccoli
About 2 cups precooked chicken cut into chunks (leftover roasted chicken works well for this)
After the crock pot mixture has been cooking 1 ½ hours stir and set to Low and continue cooking 3 hours or until ready to serve.
Thermometer should read 160 if you use one to test doneness of eggs.
Sprinkle with additional cheese when serving if desired.
