Banana Bread Muffins

This is such a great idea! When i get home i'll have to rumble through my recipes && find one to post!
But I wanna place a want ad! I am in search of the PERFECT Banana Bread Recipe! I've tried several, but none seem to come out mouth watering. If anyone has a banana bread recipe they'd like to share i'd love to give it a time! I'm in LOVE with banana bread, its my fav!! :D

Well I would say to share the pumpkin bread recipe but since we cant get canned pumpkin right now there is no point probably. lol. Get on it Tessa!

Well, the only way to test for the perfect banana bread recipe is to select a judge...hey, everyone can send a sample to me. I volunteer. You bake it, I'll test it and declare a winner. I did this once at work and the girls had a Egg Salad sandwich contest. I found out after my first bite that I dont LIKE egg salad sandwiches. BUT, I do like banana bread..

I have a fluffy peanut butter pie recipe if anyone is interested....

peanut butter pie, sounds interesting! Not sure how the banana bread will hold up in the mail tho Libra.
Tessa is fired, she has totally gotten us all excited for banana bread and left us hanging. I also have a recipe for eclair cake (whihc is more like a mouse type of pie) YUM!

Banana Muffins

Mix well:
3 large bananas - mashed
3/4 cup sugar
1 egg

Add:
1/3 cup melted margarine/butter
1 1/2 cups sifted flour
1/4 tsp. salt
1 tsp. baking soda
1 rounded tsp. baking powder

Fill cups 1/2 full

Bake at 325 degrees for 25 minutes

But quick question.. What kinda flour? Bread? Cake? All Purpose? && soda any kind like coke or pepsi, sprite??

We always use all purpose. And I guess I better edit that, not regular drinking soda but baking soda.

Oh, I got grammy's bannana bread recipe!!! My kids go CRAZY for it. When we go to the store they say lets get bannanas so you can make banana bread muffins!!!!

Here it is:

2 C Sugar
1 C Vegetable Oil
4 Eggs
2.5 C flour
2 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Salt
3 C mashed bannanas (best when turning brown on skin)

Cream Sugar and oil together with a hand mixer. Add Eggs, One at a time and Mix well. Sift in Flour, Baking Soda, Baking Powder and Salt in a separate bowl. Mix well, then add 1/2 flour mixture and 1/2 mashed bananas, mix, then add remaining flour and bananas and mix until smooth but little chunks of banana are still visible!

You can bake in bread pan, 9x13 pan or in muffin cups. I like using muffin cups. line muffin pans with muffin papers, no matter which you use, fill about 2/3 full. Bake for 18-20 mins for 9x13 pan or muffin cups.

Since I never use the bread pan, I am not sure how long to bake, but I would say use the toothpick test and when it comes out clean it's done.
