    We always use all purpose. And I guess I better edit that, not regular drinking soda but baking soda.

    Oh, I got grammy's bannana bread recipe!!! My kids go CRAZY for it. When we go to the store they say lets get bannanas so you can make banana bread muffins!!!!

    Here it is:

    2 C Sugar
    1 C Vegetable Oil
    4 Eggs
    2.5 C flour
    2 tsp Baking Soda
    1/2 tsp Baking Powder
    1 tsp Salt
    3 C mashed bannanas (best when turning brown on skin)

    Cream Sugar and oil together with a hand mixer. Add Eggs, One at a time and Mix well. Sift in Flour, Baking Soda, Baking Powder and Salt in a separate bowl. Mix well, then add 1/2 flour mixture and 1/2 mashed bananas, mix, then add remaining flour and bananas and mix until smooth but little chunks of banana are still visible!

    You can bake in bread pan, 9x13 pan or in muffin cups. I like using muffin cups. line muffin pans with muffin papers, no matter which you use, fill about 2/3 full. Bake for 18-20 mins for 9x13 pan or muffin cups.

    Since I never use the bread pan, I am not sure how long to bake, but I would say use the toothpick test and when it comes out clean it's done.

    I say Libra make them both and tell us which is best. hehe. Too bd this heat is too much for baking anything right now.

    I'm allergic to my oven....You guys will have to make them for me and sent them.. I think that is the ONLY solution here.
