Springtime Pudding
3 c diced rhubarb
1 c sugar, divided
3 c bread cubes
1/2 c milk
1/4 c butter or margarine
2 eggs
1 tsp vanilla
preheat oven to 350. Grease a shallow dish. Mix rhubarb with 1/2 sugar and set aside. Cup of the bread cubs and sprinkle with milk. cream butter and remaining sugar..... add egg, one at a time, beating well after each addition and stir in vanilla. stir in soaked bread cubes and rhubarb. Huck it in the pan. Bake for 40-45 minutes.
