RICE PUDDING CAKE
3 cups cooked rice
4 eggs, beaten
1/2 cup brown sugar
2 medium bananas, mashed
2 apples, finely chopped
1 lb.cottage cheese
2 cups mixed dried fruit
1/2 cup dried apricots, chopped
1/2 cup mixed nuts or almonds, chopped
Grated rind of an orange
1 tsp. nutmeg
1 tsp.cinnamon
Place all ingredients in a bowl. Mix well. Pour the mixture into a greased pan that is 10" round and 3" deep. Bake the cake at 400Ā°F. for 30 minutes until firm and cooked through. When a toothpick comes out clean, the cake is cooked. Allow cake to cool in the pan.
