EASY PEANUT BUTTER FUDGE

This is the weirdest recipe ever but it is OH SO GOOD !!!!!!!!!!
--One medium sized jar of crunchy peanut butter
--One container of pre-made vanilla cake frosting
1. Heat both for one minute (In their original containers) on high in the microwave.
2. Mix together in a bowl.
3. Pour out on wax paper or parchment paper till cool. Cut and eat.

This is the best candy. So Easy- So Good. They will think you worked for an hour or so to get candy this delicious.


And Chocolate Frosting is even better...and add chopped nuts for nutty peanut butter chocolate fudge...All just fantastic.

I made it once spooning into individual candy waxed cups..made the best bitesized candy treats at Christmas.

Ok, not a dessert, but I think I missed this when posting the other recipes...because the name sounds dessertish..

"Pinwheels"

2packs of large flour tortillas
32oz cream cheese
16oz sour cream
4 *small cans slice green chilies
crushed red pepper
hot sauce *use what ever your favorite is habanera Tabasco etc
salt
pepper

combine softened cream cheese with sour cream *use less sour cream for a thicker mixture.
add in chilies spices hot sauce
whip together

spread a thin layer on top of tortilla, layering tortillas 3times cut into pie shapes
serve with salsa or guacamole

Pumpkin Roll

Batter:
3 eggs
1 cup sugar
2/3 cup pumpkin
1 teaspoon baking soda
1 teaspoon cinnamon
3/4 cup flour
Mix the batter and pour into a greased, floured cookie sheet. I use the 11 x 17.
Bake at 350 for 15 minutes

Filling:
8 oz. cream cheese
4 tablespoon butter
1 cup powdered sugar
1 teaspoon vanilla
You can add chopped pecans or walnuts to the filling if desired.

Once the cake is done remove it from the oven and allow it to cool slightly. Sprinkle some powdered sugar on a clean dish towel and turn the cake out onto the towel (waxed paper can be used but I prefer a towel). While it is still warm roll it up in the towel or waxed paper and let it cool completely.

Once the cake has cooled unroll it gently and spread the batter

Rhubarb Cake

2 Cups Sugar
½ Cup Butter or Margarine Creamed together

Add 1 tsp vanilla and 1 egg
1 tsp baking soda
½ tsp cinnamon
1 Cup buttermilk (plain milk works but buttermilk is better)
2 Cups flour

Mix well (A couple minutes with a cake mixer)

Then stir in:
2 cups chopped rhubarb
½ cup chopped nuts (I use whole walnuts)

Prepare the pan as you would for any cake mix. (I use cooking spray, you may also use the butter/flour method)

Sprinkle top with ½ cup brown sugar and 1 tsp cinnamon that you’ve premixed together

Bake at 350 for 40-50 minutes. (till toothpick comes out clean)

Muffins can be made (I use the foil lined cups) fill only about half full and they will rise to the top of the tins. Bake approx 30 minutes.

Rice Pudding

One-Cup Sugar
One-Cup Carolina Rice
One half-gallon milk
2 teaspoons of vanilla
Raisins one cup (optional)
1 egg
Bring milk and rice to a slow boil over medium heat.
Stirring constantly
Let it boil for approx. 50 minutes or until the rice is soft. Take off the heat and stir in the egg and raisins. Pour into a bowl and refrigerate.
It's SO simple and delicious!!

1 cup of flour
1 1/4 cup of sugar
1 T. of baking powder
3/4 cup of milk
1 stick of margarine
1 QT of fruit..Drained.. (cherries, peaches, apples or berries)


Preheat over to 325

Melt margarine in cast iron skillet...
Sift dry ingredients into bowl...
Stir in milk to make batter....
Pour batter onto top of melted margarine...
Add fruit on TOP of the batter...

Bake for approx. 45 minutes...until browned.....

serve warm with milk poured over it

Sweet Potato Cheesecake

Crust
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/3 cup butter or margarine ... melted

Cheesecake
3(8 ounces each) pkgs cream cheese ...softened
1 Cup granulated sugar
1 3/4 cups sweet potatoes, mashed
2 eggs
2/3 cup evaporated milk .. undiluted
2 tbsp cornstarch
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg

Topping:
2 cups sour cream... room temp
1/3 cup granulated sugar
1 tsp vanilla extract

Crust: Combine crumbs, sugar, and butter in bowl. Press onto bottom and 1 inch up on sides of 9 inch springform pan. Bake at 350 degrees for 6 to 8 minutes. Do not allow to brown. Remove from oven and cool.
Cheesecake: Beat cream cheese, sugar and brown sugar in large bowl. Beat in sweet potatoes, eggs, and milk. Add cornstarch, cinnamon and nutmeg. Beat well. Pour into crust. Bake at 350 degrees for 55 to 60 minutes or until edge is set.
Topping: Combine sour cream, sugar and vanilla. Spread over warm cheesecake. Return to 350 degree oven and bake 5 minutes. Cool on wire rack. Remove side of pan and chill several hours or overnight.
