Thanks to Jillh10 who brought up pantries and fridges. I thought maybe we can have a recipe swap. If anyone wants or needs a specific recipe, you can place a "want ad'

If you have a great recipe to share you can place it here too.

I will start

Calico Beans (great side dish for parties and cook-outs)

1lb Hamburger 1lbs bacon (diced) 1C chopped onions

brown and drain

Add: 1/2C Ketchup 1tsp salt 3/4C brown sugar 1tsp dry mustard 2tsp Vinegar 1/2C sugar

Mix well then add:

1 can pork and beans 1 can lima beans, drained 1 can Kidney Beans, drained

Mix again then bake in a casserole dish at 350 for 1 hour.

This is very popular at all the places I take it, so I always have to double the recipe.:p

Someone asked for Soup Recipe's. I've been affectionately called the "Soup Queen" around here...I have dozens of recipes, however I rarely make things the same way twice because I'm a pinch of this and dash of that kinda cook. So Take what I post as my soup recipes and do whatever sounds good to you and make them your own. :)

Chicken and Corn soup with Rivels


1 cut up chicken
4 qts. of cold water
1/2 c. cut up celery stalk and leaves
1 med. onion, sliced
1 can corn niblets, drained
2 hard cooked eggs, chopped
S&P TT
4 Tbsp. chopped parsley
( Rivels )
1 c. flour
1 beaten egg
bit of milk if necessary

Cook chicken in salted water until tender and can be easily removed from the bone. Cut into bite size pieces and return to broth without cooling it any more than you have to. Add everything else but the parsley and chopped egg; boil 15 minutes.
Meanwhile make the rivels by rubbing the flour and egg into crumbs. Drop rivels into boiling soup stirring to prevent them from becoming a single mass. Cover and simmer for 7 minutes. Garnish with chopped egg and parsley.

Beef Barley Stew

1 1/2-2 lb. stew meat ( or roast cut into pieces )
1 onion, chopped
1 1/2 qt. water
1 can tomato sauce ( 15 oz )
1 can diced tomatoes with their juice
5 carrots, peeled and sliced
1 rib celery, diced
2 tsp. salt
1/2 tsp. oregano
1/2 tsp. paprika
1/4 tsp. pepper
1 bag frozen mixed vegies
1 c. barley ( I used pearl barley )

Brown beef and onion in 2 Tbsp. vegie oil, drain and add remaining ingredients except barley to the kettle. Lid and let simmer for 3-4 hours or longer. Until meat and vegies are tender. Add barley and allow to cook for an additional 1/2 hour.

Beanless Taco Mac Soup

SautƩ 2 lb Hamburger)
With 1 chopped onion
Can of creamed corn
Can of whole kernel corn
2 15 oz cans diced tomatoes and green chilies
1 8oz container sour cream
1 envelope au jus mix
1 envelope original ranch dressing mix.
1 envelope taco seasoning.

1 can vegetable juice (V8 or generic)
2 cups water
heat all to boiling
Reduce heat and let simmer a couple hours to blend flavors
Add one box Macaroni (uncooked) (or precook macaroni and use 3 cups more or less depending on how thick you like your soup. I prefer very thick soup. Cook long enough to soften macaroni then serve.
Shredded Cheddar Cheese on top of servings.

Ok, if you love beans in this sort of thing add them...I don't care for the texture of most beans in soups of this type so this is one of those cases where I took the recipe I was given and "tweeked" it. by adding Macaroni instead of the beans probably, but I just don't remember now how the original recipe was.

Reuben Chowder

butter softened
3 slices rye bread
1 can condensed nacho cheese soup
1 can condensed mushroom soup
3 cups milk
1 14oz can sauerkraut, rinsed and drained
12 oz deli corned beef, diced
1 cup mozzarella cheese

Butter bread on both sides; cut into cubes. Bake at 375 for 6-8 minutes or till browned. Meanwhile, in a large saucepan, combine soups, milk, sauerkraut, and corned beef. Cook and stir over medium heat until heated through. Add cheese; stir until melted. Top with croutons. Makes 8 servings.



I changed it a little by using cheddar cheese soup instead of the nacho cheese due to availability.
I also made toasted Swiss cheese on rye sandwiches to dip into the chowder instead of the rye bread croutons.

Stuffed Cabbage Soup

2 lbs ground beef
2 large onions chopped


(brown together and drain)

in a LARGE pan add

I medium sized head of chopped cabbage
1/2 cup white sugar
1/4 cup lemon juice
1 14oz size can of beef broth
2 28 oz size cans of tomato sauce
(or 1 14 oz size can Tomato paste with 2 28 oz cans of water)
1 28 oz can of diced tomatoes
2 28 oz cans of water
Heat to boiling
then add 1 cup of white rice
Salt and Pepper to taste

Cover and simmer about half an hour

TACO SOUP

1 lb. Hamburger cooked and drained.
2 cans pinto beans, drained and rinsed.
2 cans diced tomatoes and green chilies (do not drain)
2 cups water
1 can black beans, drained and rinsed.
1 regular size can of creamed corn.
1 envelope original ranch dressing mix.
1 envelope taco seasoning.

Bring to boil, lower heat and simmer about 30 minutes.

This makes a nice big pot full and everybody likes
it!! Something good for potluck.

A dear elderly Friend from our church, who has since passed away invited my son and I over for dinner one evening when my son was about 11. We found out after we got there that she was making Meatloaf. My son did not like meatloaf at all, but to his credit when he found out what we were having for dinner he didn't let on that he didn't like it, but instead made me very proud of him by not even letting on. He tried the meatloaf offered, and suprised us both when he absolutely loved it.

I of course got that recipe and I've never made meatloaf any other way since.

Fluffy Meatloaf

1 egg beaten
1 cup milk
3 slices bread torn into smallish chunks
1 1/2 lbs. ground beef
1/4 cup minced onion
1 1/4 tsp salt
1 tbsp Worchester sauce
1 tbsp ketchup
1/4 tsp each garlic salt, celery salt, pepper
1 tbsp horseradish

Mix egg and milk together, add bread and blend enough so bread is fairly smooth. there will be some small chunks from crust.
Add rest of ingredients to meat and blend together with egg, milk, bread mixture.

shape into loaf and bake in a shallow baking pan 1 1/2 hour until done.
Topping
3 tbsp brown sugar
1/4 cup ketchup
1 tsp dry mustard
sprinkle of nutmeg
blend and spread on loaf one hour into baking time.


I usually have to double or triple this recipe to have enough.. it goes Fast it's so yummy.

No Boil Lasagna

Meat Layer
Brown Italian Sausage
1 small chopped onion
1 can sliced mushrooms in a little olive oil

Cheese Layer
1 lb Mozzarella cheese
1 lb Ricotta cheese
1 cup Parmesan cheese
Ā½ cup Romano Cheese
2 eggs

3 quart jars spaghetti sauce (your favorite type...my current favorite is Newmans Italian Sausage and Pepper Sauce.) Or if you make spagetti sauce from scratch go for it. :)

1 package non cooked lasagna noodles (you may use less than the whole package if you want it a little lighter, or use all if you want it ā€˜heavierā€™).

Layers

Pour one jar sauce in the bottom of a pan. Put one cup water in the jar, shake it up.
layer of noodles (4 or 5 ) depending on how ā€œheavyā€ you want it to be.
layer of about half the cheese layer
layer of noodles
layer of half meat
pour another jar of sauce over the meat. (Pour the cup of water from other jar in second jar shake it up again.Gotta get every drop of that sauce out.;))

Layer of cheese
Layer of noodles
Layer of meat
Third jar of sauce (Pour the cup of water and sauce left from first two jars, in this jar, shake it up, and then pour it around the edges of the lasagna
Seal with foil and cook on a cookie sheet @ 350* for 1 hour and 15 minutes.
Remove foil, put a nice layer of mozzarella cheese on top and put back in oven to melt/brown.
Remove from oven and let stand at least 15 minutes while making garlic bread.

Chicken Sour Cream Bake

6 chicken breast halves, skinned, boned and halved again if too large to be wrapped in beef slice
1 jar ( 4 oz ) chipped beef, rinsed in boiling water and drained
12 slices bacon
One bunch of asparagus spears
2 c. sour cream
1 can cream of asparagus soup
Paprika

Wrap each breast section in slice of chipped beef, then wrap with bacon. Mix sour cream and soup. Place chicken in greased casserole dish spread the asparagus between the chicken rolls. and pour soup mixture over all. Sprinkle with paprika. Bake uncovered at 325Āŗ for 2 hours.

CORNBREAD CASSEROLE

1 can cream corn
1 can whole kernel corn--drained
1 Jiffy corn bread mix
2 eggs, lightly beaten
1 stick of butter melted
8 oz. sour cream
1 T. sugar

Pour into a buttered dish and bake @ 350 degrees for 50 to 60 minutes.


I like to make this to have instead of plain cornbread with Chili or bean soups.

Crockpot Broccoli Chicken and Rice Casserole

6 eggs beaten
24 oz carton small curd cottage cheese
2 cups shredded cheddar cheese
1/3 cup flour
Ā¼ cup melted butter
1 8oz package sliced mushrooms
Ā½ tsp onion powder
Salt and pepper to taste

1 cup cooked rice
2 stalks broccoli cooked with the rice
About 2 cups precooked chicken cut into chunks (leftover roasted chicken works well for this)

Combine first 9 ingredients and pour into a greased crockpot.
Cover and cook on High.

Cook rice and broccoli together using basic rice cooking directions.
Stir in to mixture when cooked also add the cooked chicken at this point.

After the crock pot mixture has been cooking 1 Ā½ hours stir and set to Low and continue cooking 3 hours or until ready to serve.

Thermometer should read 160 if you use one to test doneness of eggs.

Sprinkle with additional cheese when serving if desired.

I've taken this on to a work lunch potluck. It was a huge success.

DEVILED HAMBURGERS

1-1/2 lb. ground chuck or leaner ground beef
1/3 cup chili sauce (Salsa is good instead of chili sauce too)
2 tsp. Prepared mustard (French's yellow mustard)
2 tsp. bottled horseradish
2 tsp. minced onion
2 tsp. Worcestershire sauce
1-1/2 tsp. salt (I used only 1/2 tsp)

Mix up good and shape into hamburger patties. Brown in skillet or on
grill or under broiler approx 4 min. on each side. Serves 4 to 6
depending on size of pattie.

Easy Breezy Taco Bake
1 lb ground beef
1 pkg Taco Seasoning Mix
1 6oz. can vegetable juice
Brown these three ingredients together. Blot off excess oil with paper towel after juice is soaked into seasoning mix and beef is browned.
Layer in serving dish:
White Corn tortilla shells (good for the crushed pieces in the bottom of a bag)
Prepared Ground Beef mixture
1 can Campbells Fiesta nacho cheese soup
Favorite Salsa to taste
Shredded cheese as much or as little as you like
Bake @ 350 for about half an hour to warm through and until cheese is bubbly.
Dollop sour cream on served portions and have extra chips available to eat with this.
This is also a good one to take to a potluck. I've also added a layer of spanish rice to the casserole.

LEFT OVER TURKEY CASSEROLE
( 9ā€x13ā€ Baking pan )

2 packages of STOVE TOP DRESSINGā€”make according to box directions

2 packages of frozen chopped broccoliā€”cook as directed on box ā€“ Then drain the liquid

2 large jars of sliced mushrooms ā€“ drain liquid

Slice up enough left over turkey to cover the 9X13 pan.
(I make it a rather thick layer)

2 cans CAMPBELLS CREAM OF CELERY SOUPā€”do not cook or dilute ( Use as it is in the can ā€“condensed )

1 large package of shredded mozzarella cheese

BUTTER (not margarine or grease) the 9X13ā€ baking pan (be generous)
1 layer of all the cooked broccoli (be sure to drain out all liquid)
1 thick layer of left over turkey ā€”all cut up in bite size pieces
1 layer of Sliced Mushrooms (2 Cans)
1 can of cream of celery soup (do not dilute)
1 layer of dressingā€”cooked as directed on box directions (2)
Another can of cream of celery soup (do not dilute)
Add 1 very large package of shredded Mozzarella cheese on top

BAKE 350 DEGREES FOR 30-40 MINUTESā€”do not cover

This also freezes very well and you can thaw it out and eat it 2-3 months later.

Oh, if you wanted to freeze that leftover turkey recipe, just throw it into the freezer.
Do not bake it in the oven first.
When you want to use it, just thaw it out and then bake it in the oven.

Leftover turkey recipe can also be used with leftover chicken.
