    Fried Eggplant

    1 medium eggplant
    2 teaspoons salt, divided
    1 cup flour
    1 teaspoon baking powder
    2 teaspoons Italian seasoning*
    1 teaspoon onion powder
    dash ground cayenne pepper
    1/4 teaspoon garlic powder
    2 eggs, beaten
    2/3 cups milk
    1 tablespoon vegetable oil
    vegetable oil for frying

    PREPARATION:
Peel eggplant; cut in strips about 1/2-inch wide and 3 inches in length. Place eggplant strips in a large bowl, cover with water and sprinkle with 1 teaspoon salt. Let soak 1 hour; drain and pat dry with paper towels.

Combine flour, salt, baking powder, Italiam seasoning, onion powder, cayenne, and garlic powder in a mixing bowl. Add beaten eggs, milk, and 1 tablespoon vegetable oil. Beat until smooth. Heat oil over medium heat until hot. If deep-frying, heat to about 365 degrees. Dip dry eggplant strips in batter, let excess batter drip off; fry eggplant strips in batches in hot oil until fried eggplant is golden brown. Fried eggplant strips serve 4 to 6.

*You may substitute equal parts dried cumbled oregano, basil, marjoram, and rosemary for the Italian seasoning in the fried eggplant batter.

I did make this once- basically varied my Fluffy meatloaf recipe posted earlier.

It's a nice change, but I will say our preference is for the Fluffy meatloaf.

    Lari’s Swedish Meatloaf

    1 egg beaten
    1 cup milk
3 slices rye bread torn into smallish chunks
    1 1/2 lbs. ground beef
    2 Tbsp onion powder
    1 1/4 tsp salt
    1 tbsp Worchester sauce
1/4 tsp each garlic salt, celery salt, pepper
    1 tbsp horseradish

Mix egg and milk together, add bread and blend enough so bread is fairly smooth. there will be some small chunks from crust.
Add rest of ingredients to meat and blend together with egg, milk, bread mixture.

    Add 1 cup cooked rice
shape into loaf and bake in a shallow baking pan 1 1/2 hour until done.

    Swedish Meatloaf Gravy

    2 Tbsp Butter
    1 beef bullion cube
    2 Tbsp. Flour
    1 can evaporated milk
    Salt and Pepper to taste
Melt Butter in pan, whisk in bullion and flour and cook into a rue for a couple minutes. Gradually add milk continue whisking until well blended. Cook over medium heat stirring until thickened into a nice gravy consistency.

    PASTA SALAD

1 lb. spaghetti broken into 2 ½ inch pieces
1 tsp. crushed red pepper flakes You can add more if you like more of a bite!
    ¼ cup corn oil
    ¼ cup dark sesame oil
    6 tbsp. honey
    5 tbsp. soy sauce
    1 tsp. salt (optional)
¾ cup chopped roasted peanuts. You can use dry roasted.
    ½ cup chopped cilantro
    ½ cup chopped green onions

Cook spaghetti (a tsp of oil in the water will keep it from sticking together) and drain. Rinse and let cool.
Put oil and red pepper in sauté pan and heat for 2 minutes, DO NOT BOIL
Add honey and soy and salt (if using)
Combine the sauce and spaghetti in bowl and let chill. You can do this a couple of days ahead. It tastes better if it chills at least overnight.

Before serving, add cilantro, green onions and peanuts. (note) It stays nicely for days even with the cilantro, onions and peanuts.

    STUFFED GREEN PEPPERS "Italian Style"
    STUFFING MIX:
beef (hamburger) 1 med. onion, finely chopped Salt to taste (a sm. amount in the palm of your hand.) 1 finely diced or chopped or crushed clove of garlic (Or you may shake garlic powder in the bowl generously, this will be about 3/4 tsp. garlic) (but then we like a lot!) 1 tbsp. dry parsley or a nice lg. handful of fresh well chopped parsley from the garden 1 tbsp. oregano 1 tbsp. Mama D's Italian seasoning (use the seasonings to taste some people don't like as much spice as we do in our Italian food) 2 eggs, cracked & dripping over sink to bowl 6-8 saltine crackers (put them in a plastic bag & crush them with a rolling pin to eliminate crumbs on the counter) Sprinkle course ground pepper so you can see it (any kind of pepper will do about 1/2 tsp. or less, to your taste) 2 tbsp. olive oil (or a couple of splashes) (this helps to avoid sticking when mixing with your hands
If just starting out and your budget is a bit slim, you may add rice and lessen the amount of ground beef.
Mix all ingredients by hand, scraping cracker crumbs from outside of bowl. Once mixed well (with sticky fingers or gross fingers depending upon who you are) caressingly fill each green pepper, stuff well and solid but don't over fill. Be careful not to fill too briskly or energetically or skins may crack. When all of the peppers have been filled, make meatballs from the remaining mix. Kid's as well as some adults don't like the green pepper or just haven't acquired the taste for good Italian lovable food as of yet!
To Cook: In a large dish, or borrowed roaster from your mother if just starting out; place peppers open side up. Surround with meatballs and cover with sauce. (If one or two are too tall turn them on their side.)
The Sauce: Use Elaine's Homemade Italian spaghetti sauce (without meat) or substitute Paul Newman's Ragu or your favorite.
Cook 2-4 hours at 325 degrees. Check after first 1 1/2 hours to test doneness of peppers and meat. Adjust heat as needed. Do not allow to boil over as almost impossible to clean once burned on the oven. (Place a cookie sheet under the pan will help, especially if the sauce is close to the top of the sides of the pan.)
I got this recipe from online, but I didn't note the source, but saved it just the way it appears to be posting here. It's Very Good!

    Taco Lasagna

    QUICK & EASY!!!!!

1lb ground beef according to Taco Seasoning Mix package
1lg can of your fav. refried beans
1sm can of diced green chilis
    4-6 lg flour tortillas
Shredded cheese...you pick, I use a ton of sharp cheddar, with shredded
    Monterey jack...

I use a spring form pan.
Mix your green chili's with the meat after it's cooked, or in with your beans.
Put one tortilla down as your base, then start stacking, beans, meat, cheese,
tortilla, beans, meat, cheese, etc...till you fill the pan( did I mention this is a
    round lasagna?)

Bake about 45 minutes at 350, then I let it rest for about 15mins
and release the spring form..if you don't let it rest, it will bulge out and look funny!!
Top with shredded lettuce, diced tomatoes, diced onions, and some more shredded
cheese, serve with guacamole and sour cream.
